The Faculty of Hospitality and Tourism Management of Macau University of Science and Technology and Sands China co-organized a Culinary Demonstration Workshop by Master Chefs Jun Kim, Berk Barlas and Pio Gonzalez

To celebrate the 24th anniversary of Macau University of Science and Technology (M.U.S.T.), the Faculty of Hospitality and Tourism Management (F.H.T.M.) of M.U.S.T. and Sands China co-organized a Culinary Demonstration Workshop by Master Chefs Jun Kim, Berk Barlas and Pio Gonzalez on April 26th, 2024. Master Chefs Jun Kim, Berk Barlas and Pio Gonzalez from Sands China were invited to demonstrate western cuisine cooking techniques in an event that attracted F.H.T.M. students.

Prof. Ben K. Goh gave a warm welcome speech to the guests and said that over the past two decades, M.U.S.T. has made great strides and has been recognized for its focus in cutting edge, innovative education and research. F.H.T.M. at M.U.S.T continuously engaged all the stakeholders to further contribute to Macao’s social and economic development. With the aim of promoting tourism and hospitality in Macau, F.H.T.M. devotes to talent development and cultivation in hospitality industry through cooperation with industry partners and academic institutions. F.H.T.M. has kept enriching the students’ learning and experiences and enhancing their professional skills through offering or holding all kinds of courses, master lectures and culinary workshops. The university expects that through these events students may have the opportunities to learn from top chefs.

Chefs Shared their Experiences with Students

 

Chef Jun Kim joined Sands China in 2022 for the pre-opening of Gordon Ramsay Pub and Grill and he is an Executive Sous Chef of Gordon Ramsay Pub and Grill. He is currently overseeing the Londoner Kitchen team with over 400 chefs in his brigade. Chef Berk Barlas joined Gordon Ramsay Pub and Grill as Senior Chef in 2023 with extensive experience in the industry and genuine passion for food, he is well versed in European gastronomies while understanding the palates of Asian and international diners. Chef Pio Gonzalez is the chef of Gordon Ramsay Pub and Grill and as participated in multiple International Culinary Competitions, which he has conquered and won, this has led him to develop more culinary strengths in combinations and competitive perfection.

Signature Dish

 

During the sharing session, Master Chefs Jun Kim, Berk Barlas and Pio Gonzalez demonstrated their signature dish, Anchovy somen, Spring Banchan, Adana kebab with Bulgur rice, Yogurt soup. The Culinary Demonstration Workshop enriched the students’ knowledge and experiences and enhanced their professional skills in western cuisine, which would certainly be a great treasure in their future careers.
