To celebrate the 25th anniversary of Macau University of Science and Technology (MUST), the Faculty of Hospitality and Tourism Management (FHTM) held the first session of the “Chef Series” Culinary Demonstration by Chef Jean-Marie Lanio on March 7th, 2025. Chef Lanio was invited to demonstrate the bakery-making process, attracting over 30 FHTM students.

The guests included Mr. Christophe Guillot, Founder and CEO from Stella Orientis, and Mr. Dominique Ture, Hong Kong & Macau Partner of Stella Orientis. They were warmly welcomed by Associate Professor Jose Wong, Assistant Dean of FHTM.

In his welcome speech, Associate Professor Wong highlighted MUST’s commitment to enriching the students’ learning experiences and enhancing their professional skills through various courses, master lectures, and culinary workshops. He expressed the University’s hope that such events would provide students with opportunities to learn from top chefs, cultivate an interest in the catering industry, and continue to explore this field in the future.
Chef Jean-Marie Lanio Shared his Experiences with Students
Jean-Marie Lanio, a skilled bakery chef from France’s Loire-Atlantique region, is now a consultant and instructor in Seoul, South Korea. He discovered his passion for baking at 18, trained at INBP in Rouen, and later taught there before helping establish a bakery training program in Lausanne. In 2015, he moved to Seoul, where he opened his own training school and conducted global masterclasses. A two-time Meilleur Ouvrier de France finalist, he has co-authored acclaimed baking books and is renowned for pastries like Kouign-amann and viennoiseries, sharing French baking expertise worldwide.
During the session, Chef Jean-Marie Lanio demonstrated his signature dish, the pretzel. The event fully integrated the making and tasting of croissant-based pastries, allowing students to understand and personally participate in the bakery-making process, experiencing the charm of culinary delights.
