Titled "Wine and Cheese Unleashed", the lecture centered on wine tasting and sensory training. John opened with a hands-on exercise in which students tasted grape pulp, grape skins, and whole grapes to see firsthand the origins of sugars, acids, and flavours. He then explained how cool, temperate, and warm climates shape a wine’s alcohol, tannin, body, and acidity. Students went on to taste three wines using the three-step method of Look, Smell, Taste. For each wine, John broke down the structural components—sweetness, acidity, tannin, alcohol strength, and body—as well as fruit notes and other flavour nuances, helping students build a systematic framework for sensory evaluation.

The lecture also gave students the chance to interact directly with an international hospitality education expert, sharpening their professional tasting skills and broadening their international perspective.
